Which dish can be more ideal to turn into a sandwich for a Mzansi Sandwich Competition, than Bobotie. Instead of baking the bobotie with a custard topping, I used the custard mixture to make french toast. I piled on bobotie mince, tomato and onion, carrots and a yoghurt topping, to create the ultimate Mzansi sandwich.

Bobotie Mince on French Toast with Assorted Sambals
Cuisine: South African
For the mince:
  • 2 slices of bread
  • 1 cup of boiling water
  • ½ Tbsp of Nomu Chicken Fond (Concentrated liquid Chicken Stock)
  • 1 onion, diced
  • 500g beef mince
  • 2 cloves garlic, crushed
  • 1 cup grated carrots
  • 4 Tbsp Mrs. Balls Chutney
  • 1 Tbsp curry powder
  • 1 tsp tumeric
  • 1 tsp corriander
  • ½ tsp cinnamon
  • 1 tsp garlic salt
  • 1 Tbsp white wine vinegar
  • 3 bay leaves

For the French Toast
  • Sliced Bread
  • Eggs
  • Cream

For the Sambals:
  • Chop baby tomatoes and spring onions.
  • Grate carrots, and add some lemon juice and fresh coriander leaves.
  • Mix yoghurt with some cumin, salt and pepper.
For the mince:
  1. Preheat the oven to 180C
  2. In a bowl, add the boiling water and chicken fond (chicken stock), and stir until dissolved.
  3. Add the slices of bread to the bowl, and put aside.
  4. In a frying pan, fry the onions until translucent.
  5. Add the mince and cook until browned.
  6. Add the garlic, carrots and chutney, and mix.
  7. Add the spices, bay leaves and vinegar, mix again, and cook for 5 minutes.
  8. Take the bread that you put aside earlier, and mash it up. Add it to the mince mixture.
  9. Stir until the bread is combined.
  10. Put the mixture in an oven proof dish, and bake for 30 minutes.
For the French Toast
  1. I haven't stated quantities, as it depends on how many sandwiches you are making.
  2. For every 2 eggs, use 60ml of cream, and mix together in a bowl.
  3. Dip your bread on both sides in the egg mixture, and fry until golden brown.
  4. Don't leave your bread in the egg mixture too long, otherwise it will fall to pieces.
  5. I used a cookie cutter to cut rounds from my bread to make it look a bit fancier
To assemble
  1. Assemble the sandwiches by placing some of the mince mixture on top of 1 piece of the french toast, top with carrots, tomato and onion mix, and yoghurt. Finish off with another slice of french toast.
